The Physiology of Fat Adaptation

Stephen Phinney and Jeff Volek have spent decades advancing the scientific understanding of nutritional ketosis, fat adaptation, and human metabolic flexibility. Their collaborative research transformed carbohydrate restriction from a controversial dietary approach into one of the most extensively investigated physiological models of human fuel metabolism.

Together they demonstrated that nutritional ketosis represents far more than the simple production of ketone bodies. Their work established keto-adaptation as a progressive physiological process through which the body reorganises fuel utilisation, increases fatty acid oxidation, and develops the capacity to sustain physical performance while relying predominantly upon fat as its primary energy source.

Their research challenged long-standing assumptions regarding athletic nutrition, showing that well-formulated nutritional ketosis could support prolonged endurance exercise while improving metabolic flexibility. Through decades of laboratory investigation, clinical research, published books and educational lectures, they helped establish the physiological foundations upon which much of the modern understanding of carbohydrate restriction now rests.

Their work also extended beyond academia through Virta Health, where, together with Sami Inkinen and Dr Sarah Hallberg, they helped translate decades of metabolic research into large-scale clinical practice for the treatment of type 2 diabetes.

Throughout the research and writing of The Power of the Lion, their books, scientific publications and primary audiovisual lectures have provided much of the physiological framework underpinning the discussion of nutritional ketosis, fat adaptation and metabolic resilience.
